Frozen Smores

This picture above would be frozen smores. I guess they are called this because the cream you use to make them consists of marshmellows, and it's chocolate between two graham crackers. Personally it tastes nothing like a smore. I don't like smores, but I like these. I'm not even much of a chocolate eater, and I still like these. They must be good. My mom called me today and asked if I would make a dessert for a family dinner we have on Friday. I said sure, and started going through recipes for something new to bring. They are very simple and there isn't much for ingredients. They sure are messy to eat though, won't be feeding this to my 2 year old! Sorry, Carson.
Frozen Smores:
3/4 cup whole milk
24 marshmellows
12 ounces semisweet chocolate
1 1/2 cups heavy cream
18 graham crackers
Line casserole pan with foil, leave edges of foil hanging over the sides. Heat milk and marshmellows in a large sauce pan over low heat, stirring often, until smooth. Remove from heat and add chocolate, stir until melted and smooth. Refrigerate for 20 minutes. In a large bowl, with an electric mixer beat cream until forming stiff peaks. Fold the cream into the chilled chocolate mixture, mixing until you none of the white is showing. Spoon into the prepared dish. Tap the dish on the counter to remove air bubbles. Freeze covered until set. About 3 hours. Holding both sides of the foil transfer the frozen block onto a cutting board. Cut into 24 squares. Break the graham crackers in half and place the frozen chocolate block in between crackers. Place sandwiches on a platter, cover, and put back in freezer until ready to serve. Enjoy!

state fair of TX

The state fair of TX opened today. I am so excited. I go every year, I have a feeling this year will be more expensive. Carson is big enough to ride kiddie rides now, and once he sees them he will start going crazy to ride them. He gets excited to ride those ride on horses at wal mart.. I'm a mean mom and don't let him get on them though. If I were to give into those going grocery shopping would turn into a nightmare. Anyway, back on topic. I love the state fair mostly for the food, who doesn't? I am boring and rarely ever try any of the new things they have to offer. I stick with the fletchers corny dogs. I don't know what it is about those corny dogs. I also love all the tents with the crafts, it's like a mini Canton. Is there anyone else who loves the state fair just as much as me? What do you love about the fair?

Hobo or Elvis?

I finally have Carson's costume narrowed down to two.I am pretty set on the hobo one, I just dont' know if it's appropriate for a two year old. I love the Elvis one too I am just not sure if Carson will keep a wig on. I have had the hardest time choosing a costume this year because last years is so hard to beat. He just looked adorable. I know I probably put way to much thought into this, but this will be my last year I get to choose his costume. Next year he will probably want to be batman, spiderman, or hulk. I am really not into characters. I also want him to win first place in the costume contest again. I know it's shallow, but I always got first place in the contests I was in so I want to keep the tradition going.
