I'm a big kid now

No more pull ups or diapers. I'm so proud. Carson officially pooped in the potty on his own today. I can now feel comfortable to say he is potty trained. He has been going pee pee on his own for a couple of weeks I was just waiting on him to poop, and he did! This is an old picture, but I was too lazy to try and get him to smile for me. I wish I could say that I'm excited to save money on diapers, but those diaper buying days aren't over yet. I'm already stocking up for the next one. I'm just glad I won't have two in diapers at the same time!

Loyal customer

Today I scored a free meal at Chickfila, all because I am a loyal customer. As I was ordering my meal the manager came over and said my order was on chickfila, because I come in so often. I was so excited! Can't beat a free meal!!

Frozen Smores

This picture above would be frozen smores. I guess they are called this because the cream you use to make them consists of marshmellows, and it's chocolate between two graham crackers. Personally it tastes nothing like a smore. I don't like smores, but I like these. I'm not even much of a chocolate eater, and I still like these. They must be good. My mom called me today and asked if I would make a dessert for a family dinner we have on Friday. I said sure, and started going through recipes for something new to bring. They are very simple and there isn't much for ingredients. They sure are messy to eat though, won't be feeding this to my 2 year old! Sorry, Carson.
Frozen Smores:
3/4 cup whole milk
24 marshmellows
12 ounces semisweet chocolate
1 1/2 cups heavy cream
18 graham crackers
Line casserole pan with foil, leave edges of foil hanging over the sides. Heat milk and marshmellows in a large sauce pan over low heat, stirring often, until smooth. Remove from heat and add chocolate, stir until melted and smooth. Refrigerate for 20 minutes. In a large bowl, with an electric mixer beat cream until forming stiff peaks. Fold the cream into the chilled chocolate mixture, mixing until you none of the white is showing. Spoon into the prepared dish. Tap the dish on the counter to remove air bubbles. Freeze covered until set. About 3 hours. Holding both sides of the foil transfer the frozen block onto a cutting board. Cut into 24 squares. Break the graham crackers in half and place the frozen chocolate block in between crackers. Place sandwiches on a platter, cover, and put back in freezer until ready to serve. Enjoy!

state fair of TX

The state fair of TX opened today. I am so excited. I go every year, I have a feeling this year will be more expensive. Carson is big enough to ride kiddie rides now, and once he sees them he will start going crazy to ride them. He gets excited to ride those ride on horses at wal mart.. I'm a mean mom and don't let him get on them though. If I were to give into those going grocery shopping would turn into a nightmare. Anyway, back on topic. I love the state fair mostly for the food, who doesn't? I am boring and rarely ever try any of the new things they have to offer. I stick with the fletchers corny dogs. I don't know what it is about those corny dogs. I also love all the tents with the crafts, it's like a mini Canton. Is there anyone else who loves the state fair just as much as me? What do you love about the fair?

Hobo or Elvis?

I finally have Carson's costume narrowed down to two.I am pretty set on the hobo one, I just dont' know if it's appropriate for a two year old. I love the Elvis one too I am just not sure if Carson will keep a wig on. I have had the hardest time choosing a costume this year because last years is so hard to beat. He just looked adorable. I know I probably put way to much thought into this, but this will be my last year I get to choose his costume. Next year he will probably want to be batman, spiderman, or hulk. I am really not into characters. I also want him to win first place in the costume contest again. I know it's shallow, but I always got first place in the contests I was in so I want to keep the tradition going.

Back to school

Today Carson started back at Mother's Day Out. I really had high hopes that he would be fine when I dropped him off. I couldn't have been more wrong. I had been telling him if he was a good boy we would go to wal mart and get him a toy boat or monster truck so all he had been talking about was wal mart. We walk in, print his sticker, and start heading to class. He tried to go to his old classroom first I think he would have been fine there because it's still familiar, but he's not a baby anymore. I finally get him to his new teachers, he starts crying, throwing all his body weight onto the floor so it's hard to pick him up, and finally goes in. I know he will have fun, they eat, go outside, dance to music, and read some books which are some of his favorite things to do. Hopefully after couple of weeks of going he will be back in his old routine!

Oh! How how time flies!

I was looking through pictures today and found some of Carson from just 6 months ago and I was thinking how much he has changed. He doesn't even look the same to me anymore. He is just growing up too quick. I always hated hearing my mom say, "it seems like just yesterday you were born." It's so true. You don't realize it until you have your own children. The year he was born seemed long, but once he turned one he was already turning two. I can't get over it. I love watching Carson grow and learn. I know every mom says how smart their children are, but he really is smart. He loves taking things apart and putting them back together. He doesn't stop until he has figured it out. He is so much like Ryan it's crazy. I will stop bragging about my child now and share some of the pictures I was looking at...

Long time, no post...

I don't really have much to say. I am pretty sure nobody reads this thing anyway. I am home alone enjoying the peace and quiet, so I figured what the heck. I will blog. This is a picture of Jess and I at her shower I hosted. She is getting married in exactly 30 days. I can't wait. It seems like it has been forever since she got engaged!!! I am honored to be apart of her bridal party. We have been friends since high school. Although it took her a couple of years to like me. She likes to remind me how she used to hate me because I hung around cheerleaders. HA! She also likes to remind me everytime she sees me how fat I was when I was pregnant. I guess these are two reasons why I love her.

Carson's new luggage

This is Carson's new luggage for our trip to Arkansas. I have been looking for a cute duffle bag and just couldn't find any I really cared for. Katy showed me these off of another blog I looked them up on Amazon and quickly ordered them. I'm going to have his name embroidered across the penguins belly!! He's going to be so excited to wheel his own bag, and of course he will look adorable. Thanks Aunt Katy!

Boys will be boys

This is Carson's shirt after maybe about 30 minutes of being at the park. I was watching my friends little girl as well as Carson and Carson decided to take off to the stream of water. He fell in right as I got to him. Note this water is not deep I can't even consider it a creek, it's just about inch deep. It's nasty creek water though so it was all green and mossy and gross. Needless to say his yellow shirt was ruined. I really was hoping it wasn't I had just bought it for our pictures we just took. Luckily it only cost $7. I can't stress too much.

Happy Easter

Carson's Easter bucket. I wanted to get him a cozy coupe car, but as the weather got warmer and I was putting him in shorts I realized he didn't have any clothes that fit. Only a couple of short sleeve shirts and maybe 2 pairs of shorts. Instead of using the money on the car I went and bought him clothes he needed that led to his basket not being full of many goodies. He is still too young to really understand all this Easter egg hunt and basket stuff anyway.

A tad bit spoiled

I must say I am pretty spoiled by my husband. I am so fortunate to have a man like him. I get to stay home and hang out with my baby boy. Once a week I have a day off when Carson goes to MDO. We have a nice home, and nice cars. I couldn't ask for more. I am just so proud of his hard work.

Spicy seafood jambalaya

Tonight I made spicy jambalaya for dinner. It is so easy, but not so quick. You buy whatever meat you want to put in it and just follow the directions on the box of Jambalaya mix. We normally use smoked sausage, tonight I did it a little different. Last week I had bought raw shrimp instead of cooked. What a mess that was, I definitely learned my lesson. Once I deveined the shrimp I froze them and decided to throw them in jambalaya and it was great! We eat our jambalya with black beans and Ryan likes Texas Toast.

I love this picture, I look so thin. This is my inspiration to keep working out. Bathing suit season isn't too far away.

No more bangs

My hair is finally long enough I can do this^^^... I am trying to grow my hair back out long again. It is so hard to grow it out, it seems like it takes forever. I have to get used to my bangs being put back when I wear it up, it kind of looks weird to me. I don't know the last time I saw my forehead. It's not the best picture of me, but it's okay Carson makes up for it!!! He has been loving taking pictures! I am so glad, I hope this means he does great when we have our family pictures taken.

This is Carson the day he was born. A healthy 8 lbs. 14 oz.
This is Carson today. 28 pounds. He is exactly 20 months old. I just can't believe how fast time goes by. In just 4 months I will be a mom of a 2 year old!!! WOW! I can't say I feel old, because I am only 22. I am just amazed at how much Carson has grown and accomplished in such a short amount of time. I am so proud of him!
Now, for all of the people constantly asking me when I am having another one. It will be awhile. I want to enjoy having just one child as long as I can. Don't get me wrong I get baby fever often, but then I think about carrying bottles, taking the infant carrier out of the car, I would need a double stroller, it's hard to find people who would want to watch two kids instead of just one. So many things would change. I like bonding and spoiling my very busy little man!

The perfect snack cup for toddlers

I LOVE these snack cups. They are awesome for the car and on the go. You just fill them up with whatever snack you want and they stick their little hands down in there and grab it. Carson hasn't figured out how to take the lid off yet, so we're still good to go. I know it won't be long before I am looking for another snack cup he can't take the lid off of.
